KUEH LAPIS




INGREDIENTS:

500GM BUTTER
1 TIN CONDENSED MILK
2 TABLESPOON HONEY (蜜糖)
1 TEASPOON VANILLA ESSENCE
1 TEASPOON MIXED SPICES (五香粉)
25 EGG YOLKS
200GM SUGAR
170GM PLAIN FLOOR (SIEVED)
5 EGG WHITES
PINCH OF CREAM OF TARTAR

METHOD:
1/ GREASE THE SQUARE BAKING TIN WITH BUTTER.

2/ PUT BUTTER, CONDENSED MILK, VANILLA ESSENCE, HONEY AND MIXED SPICES INTO THE MIXING BOWL.

3/ MIX THE INGREDIENTS WITH MIXER UNTIL WET MIXED AND PUT ASIDE.

4/ BEAT EGG YOLKS WITH SUGAR UNTIL CREAMY AND THICK.

5/ ADD THE BEATEN EGG YOLK MIXTURE TO THE CREAMED BUTTER MIXTURE AND MIX WELL.

6/ FOLD IN THE SIEVED FLOOR USING FOLDING METHOD AND PUT ASIDE.

7/ PUT THE EGG WHITE INTO ANOTHER BOWL AND ADD PINCH OF CREAM OF TARTAR.

8/ BEAT THE EGG WHITE UNTIL STIFF.

9/ PREHEAT THE OVEN AT 180 DEGREE C AND IN GRILLING MODE.

10/ FOLD IN THE BEATEN EGG WHITE INTO THE PREVIOUS MIXTURE.

11/ FOR THE FIRST LAYER, SPREAD 2 TABLESPOON OF MIXTURE INTO THE BAKING TIN USING SPOON.

12/ WHEN IT TURNED BROWN, REMOVE FROM OVEN (ABOUT 2~3MINS)

13/ REPEAT THE SAME METHOD FROM (11 & 12) UNTIL THE LAST LAYER.

14/ TURN THE CAKE OUT OF THE BAKING TIN AND LEFT IT ON THE COOLING RACK.

LET IT COOL COMPLETELY AND THERE, YOU HAVE A NICE AND DELICIOUS KUEH LAPIS.

TIPS OF THE DAY:
WHEN DOING METHOD 1
*DO NOT USE OIL TO GREASE COS IT WILL MAKE THE LAPIS MORE OILY.
*YOU CAN ALSO LINE THE BASE FOR EASY TURN OVER OF THE LAPIS LATER.
*THERE IS NO NEED TO LINE FOR THE SIDE AS THE PAPER WILL GET BURNED.

WHEN DOING METHOD 5
*YOU MAY NEED A BIGGER BOWL TO PUT ALL THE MIXTURE.

WHEN DOING METHOD 8
*THE EGG WHITE WILL STAY IN THE BOWL EVEN IT IS TURNED UPSIDE DOWN.

WHEN DOING METHOD 12
*CHECK THE CAKE WITH A SKEWER TO MAKE SURE THE MIXTURE IS BAKED AND NOT STICKING ONTO THE SKEWER. IF YOU DON'T HAVE SKEWER, TOOTHPICK CAN BE USED TOO.

WHEN DOING METHOD 13
* MAKE SURE TO LOOK OUT FOR THE CAKE ALWAYS AS IT MAY BURNED EASILY.
* MAKE SURE THE CAKE IS ALWAYS CHECK WITH SKEWER BEFORE SPREADING THE NEXT LAYER. THIS PROCEDURE WILL ENSURE YOU HAVE A "TOTALLY" BAKED LAPIS.

WHEN DOING METHOD 14
* YOU CAN ALSO USE BBQ WIRE MESH AS A COOLING RACK.
